TWD: BCM: Les Whoopies

My second TWD: Baking Chez Moi was also my first time making Whoopies even though I've eaten them many times. I asked David if his mom used a whoopie pie pan and like any true Central Pennsylvanian he laughed in my face. So I embarked on this experiment whoopie pie pan less and it went pretty well even though they were all mis-matched in size. I tried using my Silpat vs. parchment paper but definitely felt the Silpat worked better and gave a smoother bottom. I put my ganache in a small container and dipped the top of the whoopie pies and filled them by pastry bag. My acapella group LOVED them. David and I thought they were a bit on the fudgey side for traditional whoopies but absolutely delicious. Definitely making minis next time as they were sooo rich.

I ended up needing about a recipe and a half of the peanut butter frosting although not knowing that I made two batches and froze half a batch for later use. I probably could have made at least 1/2 maybe even 1/4 of the ganache but have also frozen that as well. As I said most of my whoopies were a bit mismatched in size so I need to pay a bit more attention to leveling my scooper next time!
