TWD: BCM Double Corn TeaCake


I am usually only able to do two TWDs a month so I chose the easier BCM this month, hats off to those doing the profiteroles, ice cream, and hot chocolate sauce. This cake came together quickly after three grocery store visits to find the corn flour! The cake is moist and tasty but I expected it to be a little more refined and it just seems like sweeter cornbread to me. I'm not knocking it though. It is nice and moist and the sugar makes me want to keep taking piece after piece. I guess I'll have to find some more uses for the corn flour although I wouldn't be opposed to making it again during chili season.
