This is another recipe from the Chelsea Market Cookbook. It is supposed to be a Brown Rice bowl with Asian Vegetables, but I made it over white parboiled rice as I did not have anything else and don't usually like brown rice, but I would say this recipe would be great with brown or basmati. Let me say, the sesame-lime dressing was out of this world delicious although very garlicky and hot! It involved edamame, japanese eggplant, bean sprouts, scallions, and baby bok choy. It was a really yummy and healthy dinner but next time I would definitely half the recipe, it makes enough for like 10 people honestly. I could use this dressing for stir fry or on many other salads, it was delicious!
